When Justin and Jonathan Petruce opened their restaurant, they were immediately recognized for their talent in the hearth. Back then (2014), Philly-avant-garde cooking meant a rustic wood-fire oven, and especially so if it wasn't meant for blistering up a Neapolitan pizza (things have recently changed). People loved Petruce for its food, but it was Tim Kweeder's (Petruce's GM/wine director) eclectic wine program that really drew some attention, mostly for being interesting and fun, and just a tad for starting the long-overdue mark-up conversation among Philly's restaurant-interested.
And all the while, right under our very noses, Petruce managed to create one of the best cocktail bars in the city. If you already knew, then good on you.
