Owner Alan Su told Eater Philly he will do the same procedure today, as they gauge what kind of prep time and space they will need to serve the hungry Philly Ramen-ites the best possible product. Su is focusing on Hakata-style ramen, which features three options for broth: shoyu (soy sauce-based), miso, and karai (spicy miso). Diners order at a counter when first walking in, and take their steamy bowl to their table in a self-serve environment. Each bowl costs around $9. [EaterWire]
