Nom Nom Ramen opened at 5 P.M. yesterday at 20 S. 18th St. for the first 50 customers in a sort of soft-opening. Owner Alan Su told Eater Philly he will do the same procedure today, as they gauge what kind of prep time and space they will need to serve the hungry Philly Ramen-ites the best possible product. Su is focusing on Hakata-style ramen, which features three options for broth: shoyu (soy sauce-based), miso, and karai (spicy miso).
