Justin Rosenberg's Honeygrow is in the final stages of life behind plywood, and getting that much closer to becoming part of Philly's lunchtime craziness. Rosenberg told Eater he will be open by the middle of May at the latest, and has most of the menu ready for launch. The concept is based on customized stir-frys and salads with fresh and high-end ingredients and a touchscreen self-serve point of sale.
"Customers will have the option to either do it themselves with an easy to use interface, or if they would rather order from a person, they have that option, as well," Rosenberg told Eater. "And we got some great ingredient porn pics shot by Jason Varney to enforce the fact that our elements are of the highest quality, and fresh. It will separate us from other run-of-the-mill operations."
Rosenberg tapped chef Shola Olunloyo to consult with sauces and techniques for the salads and stir-frys, and help create some of the pre-made options.
"While we want customers to have the option to create whatever crazy ideas they have, we also will offer some ideas and finished versions they can just order," said Rosenberg. "Chefs know what flavor profiles and ingredients go together, and in this case they've been designed by Shola. We're very excited."
