Joining the fray of specialty Eater Pizza Week pies is Santucci's in South Philly, who have whipped up a flavor bomb to celebrate the occasion. Chef Bobby Saritsoglu has taken his ridiculously delicious slow-cooked shortrib and wild mushrooms and piled it on the square pie, with fontina cheese, caramelized onions, and drizzled with housemade BBQ sauce. The small square will set you back $8.50, the medium is $12, and a large is $18. A medium is more than enough to feed two people.
Look for our pizzaiolo interview with Frank Santucci, Sr. later today on the traditions of Philly's oldest square pie, going back three generations in the wilds of Northeast Philly.
