Chef Scott Anderson, who was recently named on the list of Best New Chefs by Esquire Magazine, is opening up a new restaurant, Mistral, in Princeton, NJ later this year. Anderson, who already has a world-class restaurant in Elements, is going for a more laid-back atmosphere for his new space at 66 Witherspoon Street. The restaurant will be BYOB.
"We're still going to do the inventive cooking we always do, but make it small plates and a more casual environment," Anderson told Eater. "The opportunity kind of came out of nowhere, so we jumped on it. It's exciting."
Mistral, which means "northwesterly wind," is in reference to the large amount of outdoor seating at the restaurant, which can hold 40 diners al fresco. There will be another 45 seats inside. Anderson's Elements has long been a destination restaurant for the Philly food set, and has hosted a few local chefs for guest dinners including Kevin Sbraga and John Shields.
"We're going to keep posting photos on the Twitter account," Anderson said. "So, people can keep up with the progress, and get as excited about it as we are."
