Mike Santoro and Michael Dorris' restaurant, The Mildred, is inching closer to an opening date, which right now sits at September 3 or 4. The Mildred, which has replaced cult-fave James, is almost complete in terms of demolition and construction, including moving the front door to a more central location.
Santoro told Grub Street that The Mildred has evolved into a more American menu with touches of European technique and sensibilities, as opposed to the original concept of old-world European (Santoro spent time working with world-famous chef Heston Blumenthal at The Fat Duck). The website of his PR team, Bullfrog & Baum, also mentions a chef's counter for the project.
