Chris Kearse's debut restaurant, Will, is opening the doors on East Passyunk Avenue this Friday, August 24. Kearse is sticking to his tried-and-true philosophy of simple ingredient, complex flavor in the opening menu, which has more than a few dishes that fall into the drool-worthy category.

While there are only five entrees on the list, it's a serious list that features Rhode Island skate, Wagyu beef, King salmon, and a milk-fed poulard. Examples of appetizers are a sweet corn veloute, rabbit, and the ubiquitous pork belly. Dessert offerings include a white chocolate cheesecake, chocolate bouchon, and a few other goodies. The restaurant is BYOB, but they offer loose tea and French press coffee.
