Matt Ridgway, known to intense Philly carnivores as the brains behind PorcSalt, has taken over the former Cafe at Rosemont in Rosemont, NJ, and theurned it into The Pass. He'll be showing off his amazing charcuterie chops during the day, and at night it will become a full-service restaurant.
The concept for the sit-down experience will be a French countryside eatery set in the gorgeous quaint structure that's been planted there for as long as anyone can remember. The charcuterie operation should be in full swing by February, but don't expect the restaurant to be serving hungry diners until the Spring.
