It was a very sad day when Philly's crown prince of BBQ, Mark Coates, left town and headed south to his old stomping grounds. But, Eater is happy to report that we caught up with Coates, who told us that he is working at a beer and wine bar called Preservation, located at Sunny Isles Beach in Miami.
Believe it or not, Coates hooked up with another fellow ex-Philadelphian, Ryan Harrison (who worked with Coates on The Smoke Truck), who is executive chef of the restaurant, which is owned by Nicole Richaud. As the name suggests, Preservation is focused on all things pickled, cured, smoked, and, obviously, preserved.
Early reports have been excellent, and Coates said that the establishment is in the process of hiring more people as business is exploding. It's a real bummer that our BBQ prince isn't coming back to Philly, but it's always nice to know that one of ours is making good somewhere else.
