Catching Up With Kevin Sbraga's The Fat Ham

Opening is right around the corner for The Fat Ham, the latest from Kevin Sbraga (hmm, has there been any other news about that guy lately?). The doors will open at the new U City spot on December 6, but until then, here are some updates to fuel your daydreams.

Michael Klein has put out an extensive series detailing the restaurant's progress, the most recent installment of which includes a couple of teaser shots of the dining room in its current state. If you'd rather look at the food itself, the restaurant's official site has a gallery of what's in store. The full menu is still to come, but you'll see Sbraga's takes on shrimp and grits with country ham, Southern hummus (which uses boiled peanuts), smoked lamb belly with cola sauce, and a few more.

The bar holds plenty of promise, too: look for barrel-aged cocktails, including a classic Boulevardier (think of a Negroni, with bourbon in place of the gin), and a number of good-looking signature cocktails. The best-named of the bunch has to be the eponymous Fat Ham Smash, which mixes gin, peach preserves and bitters, lime, raspberries, and cranberry juice.
