Tonight marks the opening of Avance in the storied former home of Le Bec-Fin. You'll hardly recognize it now, but that's entirely the point. (Watch these stunning preview videos from HyLo Labs to get reacquainted.)
Chef Justin Bogle, a Roxborough native who earned two Michelin stars during his time leading the kitchen at Manhattan's Gilt, is looking forward with a modern American menu. In the earlier stages of the massive renovation, Bogle was clear that the team's central aim was to make "diners ... feel like the restaurant is a living, breathing thing," a feeling that will no doubt be advanced by the ever-changing tasting menus on offer (expect some novel presentations and serving pieces to do justice to the food), but begins outside with the towering "living wall" built into the facade.
In a sense, it has nothing to do with Le Bec-Fin. But on opening day, it feels like it has everything to do with reigniting the feelings of excitement and grandeur in dining that Le Bec-Fin exemplified at its best. It feels like the best kind of tribute.
