It seems like Philly has been waiting forever for Ben Puchowitz and Shawn Darragh to open Cheu Noodle Bar, but the wait isn't too much longer. On April 1, everyone will get the opportunity to try Puchowitz's top-shelf ramen that people waited over two hours for during their series of pop-up dinners at Matyson, the BYOB where he is the chef.

In the space that once housed the takoyaki-centric Maru Global, the Cheu crew have completely overhauled the space, building out a ramen bar and expanding the seating to accommodate 32 diners. While the opening hours have yet to be determined, Darragh said that they'll ultimately be open from 11:30 a.m. until 1 a.m., so the late night crowd can slurp some soup, too.
