Ben Puchowitz and Shawn Darragh have been long dreaming of opening a noodle bar, and now they're only days away from the long-awaited Cheu Noodle Bar. Puchowitz and Darragh set up a series of pop-ups at Matyson that sold out within minutes and was a complete madhouse when the tastings actually happened. Now, after a long search for a space—the restaurant ended up at the former Maru Global located at 255 South 10th Street—the kitchen has been overhauled and so has the seating, and they're ready to open up by March 25.
The Q&A at Grub Street goes further into the nitty-gritty of the project, and is worth a read. There's going to be a 32-seat L-Shaped bar and the inspections are coming along nicely, and soon we'll all be eating many steamy bottlers of noodle soups.
