CENTER CITY — Longtime Jose Pistola's chef Lauren Clark has left the fold, and owners Casey Parker and Joe Gunn have brought in studly chef Adán Trinidad. The entire menu is being overhauled by the talented chef who previously worked in Philly at Fish and El Vez. [Foobooz]
ALL OVER — Two of Philly's oldest bars, City Tavern and McGillin's Olde Ale House, made the Bucket List Bars, the website companion of the recently released book focusing on places to throw one back before dying. City Tavern still has the old world costume-wearing vibe and specialty Yards Beers, and McGillin's is Philly's oldest continuously running bar, so, if you've yet to visit either, do it before getting hit by a SEPTA bus. [Citypaper]
CALLOWHILL — Pizzeria Vetri is getting closer to opening, and it looks like their giant custom oven has just touched down at the restaurant space. Grub Street is reporting that Vetri installed a Renato ARS 700, which is made here in the U.S., as opposed to one imported from Italy. The oven weighs 8,500 pounds, is three feet tall, and eight feet in diameter. Chris Bianco of the legendary Pizzeria Bianco in Arizona uses one as well. [Grub Philly]
