Philly's favorite fish whisperer, Mike Stollenwerk, has been named the new chef at longtime Center City BYOB Branzino. To celebrate the arrival of the super-talented chef, owner Luan Tota is giving Stollenwerk a beautiful new 2,500 square foot kitchen with all the bells and whistles one could ever want, including a new charcuterie room. In addition to Stollenwerk's arrival and that massive kitchen project, the restaurant has added more seating inside and an expanded outdoor patio, as well.
Tota opened Branzino in 2003 after working the front of the house at Le Bec Fin, but the restaurant has never reached the level of quality and recognition he was working towards. The addition of Stollenwerk, though, gives Tota and Branzino the opportunity to succeed at the highest level here in Philly, and get that buzz he had always hoped for. And after a very tumultuous year for Stollenwerk at Fish, allowing him to focus on the kitchen will bring back the seafood master we all know and love.
