Kevin Sbraga Opening The Fat Ham this Fall

Top Chef champ Kevin Sbraga announced that he is opening a new restaurant in University City this fall called The Fat Ham. Sbraga is focusing on Southern cuisine for his second restaurant, which is setting up shop at 3131 Walnut Street. He's done the homework, so expect a thorough exploration of the culinary traditions, heritage, and homes of the South at The Fat Ham, which will offer up the kind of food you find at Sunday suppers and on country porches.

Of course The Fat Ham has a pork-centric menu that explores heritage breeds and Southern staples such as sorghum butter, benne seeds, pimento cheese, and Carolina gold rice. Sbraga is also whipping up house made pickles, hot sauce, buttermilk, and fresh macaroni. Most importantly, there will be chicken-fried steak and hot fish.

There's no set timeline just yet, but The Fat Ham is opening sometime in the fall. They'll serve dinner from Sunday through Thursday from 5:00 p.m. until 10:00 p.m., and closing at 11:00 p.m. on Friday and Saturday.
