The projected opening date for Sancho Pistola's was originally said to be "in time for Super Bowl weekend," and just like clockwork, the grand opening is happening tonight, starting at 7 p.m. The new Mexican spot from Joe Gunn, Casey Parker, and chef Adan Trinidad expands upon the concept familiar from their Center City standby Jose Pistola's, which has recently found new life under Trinidad's direction in the kitchen.
You can find the menu here, which has some familiar entries (hi again, spicy tuna guac), but also sports lots of new features. Sancho's has a raw bar, tons of new tacos (including falafel and Brussels sprout versions for the veggie crowd), more steamed buns, and some full-on entrees, like platters of carne asada, monkfish, or chicken leg confit in mole negro.
There's also weekend brunch coming soon and a full bar in place (check out the beer selection, which is as strong as you'd expect from the Pistola's team), plus promises of sports on multiple TVs. The kitchen will be open until 1 a.m. every night of the week.
