Cochon's New Winter Menu Gets a Snowy Debut

Fittingly, tonight marks the debut of the new cold-weather menu at Gene and Amy Giuffi's Queen Village BYOB Cochon. A couple of highlights from the fresh crop of stick-to-your ribs offerings include wagyu beef tongue pastrami with red cabbage, cornichon and pumpernickel salad, housemade sausage with caraway dumplings and choucroute, and pork belly over merquez-and-white-bean cassoulet.

You could go with a lighter option like smoked salmon cakes with frisee and asparagus salad, but come on — if you strap on your snow boots and head out in this bluster, you've more than earned a little ham in your mashed potatoes. (Did we mention there are ham mashed potatoes on the menu?)
