More Details on the New Vedge Project, V Street

The team behind Vedge announced in October their plans for a new concept for Rittenhouse, but now there are finally some more details to report. Chef and co-owner Rich Landau announced today that the new spot at 126 S. 19th Street will be called V Street, and carries the tagline "a street food bar."

The focus will be on vegan small plates inspired by global street food with "adventurous, bold, spice-forward flavors." (That's in keeping with Landau's early remarks that he would be focusing in on "some of the bolder, edgier dishes [they've] been doing" on their ever-changing and popular "dirt list.")

A full bar will feature cocktails with a similarly worldly point of view, "uncommon beers," and a wine list featuring only natural wines and offering about 20 bottles at any given time, all available by the glass.

Despite initial hopes to open by late spring, the current timeline puts opening day somewhere in late summer or early fall of this year. Delays are being brushed aside as the "same old story," and the team has plenty to keep themselves busy with these days, as they've been racking up the accolades in the national press as well as locally.

Landau told Eater today that there "will be some lateral moves" as far as staffing goes, though nothing firm yet. Hiring should begin around May. He added that he and co-owner/ace pastry chef Kate Jacoby prefer to be very hands-on as far as design goes and do much of the initial work in-house. At this point, there's no official designer on board.
