It's finally opening night for Volver, Jose Garces' new showpiece at the Kimmel Center. (Bar Volver, the lounge outside of the main dining room, opened its doors a week ago.) Between the impressive address, the oft-delayed road to opening, and of course, the tickets, Volver has already generated plenty of conversation. Now, it's time to see exactly how the ambitious concept and menu will play out.
The opening menus, for both the abbreviated early tasting and the full performance tasting, can be found here. If menu items like "Milk & Cereal" read as complex ("rice flakes, quail egg, bacon, chicken oyster, truffle, thyme marshmallows, white asparagus milk"), they still fail to translate exactly how much painstaking work we saw the crew (led by chef de cuisine Natalie Maronski) devoting to individual elements. While all eyes are on the ticketing system and how it will fare here in Philly, the benefits of the pre-paid booking system to the back of the house tackling such a complex and exacting menu are immediately obvious.
