Philly's just getting into the thick of the annual ritual of spring menu turnover right now, as chefs are eager to move on from the cold-weather produce doldrums (some might say too eager). At Sbraga, the new seasonal changes accompany a reconfiguration of their popular four-course tasting menu: The price has gone up to $55 (an increase of $10 $6 [a rep confirms that the most recent price was $49]), but with the minor price bump come some perks. There are no longer any supplements or upcharges, and the foie gras soup, considered by most to be the restaurant's signature dish, is now included as an amuse. (Vegetarians can swap in carrot-ginger soup, and the pre-meal gruyere popovers are also still included.)
