Pastry star Sam Kincaid, of Fork, High Street on Market, and a.kitchen, is one of two Philly semifinalists for Eater Young Guns 2014. Today, Eater National chats with Kincaid (and boss Eli Kulp) for an in-depth profile of the 29-year old who grew up in a farming family in Fort Atkinson, Wisconsin.
Kincaid discusses her background and career trajectory, how her role has evolved as the partnerships at Fork have grown into one of the most high-profile restaurant groups in the city, and why she embraced pastry in the first place:
I think it's the same qualities that I love about farming, which is getting my hands really kinda messy and dirty and turning something rough and messy into something clean and lovely.
