Pasta Flyer's Mark Ladner Talks Gluten-Free Noodle Science

Next week, Philly will get its first glimpse of Pasta Flyer, the new gluten-free noodle concept being tested out by chef Mark Ladner of NYC's Del Posto. But this week, he's been doing pop-ups in Boston — and last night, spoke about his research so far at Harvard's annual Science & Cooking public lecture series.

Eater Boston editor Rachel Leah Blumenthal provides a thorough recap of the talk today, delving into the highs and lows of trying to pull off the near-impossible within the limited capabilities of a food truck. Even beyond the difficulties of perfecting the nontraditional dough recipes, Blumenthal reports, "they haven't actually managed to boil water on the truck yet."
