Cheu and Vetri Get New Chefs

Familiar faces from the Philly food scene rise through the ranks.

Cheu Chef Ian Boothman will now helm the kitchen at Cheu Noodle Bar, Ben Puchowitz and Shawn Darragh's cozy and innovative Washington Square West noodle shop. Chef Boothman added some new small plates: General Tso’s Brussels sprouts, spicy tuna tostada, crispy sweet potato rangoon, and pizza dumplings. He introduced new entrees as well: a reformulation of their coconut curry noodles, mushroom pho, fried chicken tan tan, yakisoba, and a coconut pork belly rice bowl.

Cheu also installed Melissa Pellegrino as the front-of-house and beverage manager. She's added new drinks to the fall/winter menu. Riot punch, vanilla pepper tequila, that floral jawn, and ging ging, a whiskey and ginger cider concoction, round out the beverage program.

Vetri Joe Delago is now chef de cuisine at Vetri. His time at Alla Spina, Osteria, and three years at Vetri have prepared him for the role. Marc Vetri Instagrammed his enthusiastic welcome to Chef Delago.
