There's a new head butcher in place at Fishtown's Kensington Quarters, according to a report today from Foobooz. Per a statement from co-owner Michael Pasquarello, Heather Thomason has been promoted to fill the position after opening head butcher Bryan Mayer left the shop earlier this month
A former graphic designer, Thomason explained how and why she made the transition to butcher in an interview with the Inquirer's Samantha Melamed back in December. She has been with Kensington Quarters since its beginning, and has taught butchering classes in the upstairs classroom.
Kensington Quarters opened in October 2014, incorporating a whole-animal butcher shop right alongside the restaurant and bar, with an aim to promote top-to-bottom sustainable practices.
