Collin Shapiro and Jonathon Zilber are less than a week away from the first soft opening of their small batch-fermented, hand-rolled bagel shop concept Philly Style Bagels at 1451 East Columbia Ave., across Fishtown's Palmer Park.
As December came to a close, the industry duo said goodbye to Joe Beddia's ovens, their stand-in shop for almost two years. After some final touches to the new space, Shapiro and Zilber will softly open their doors to the public from 7 a.m. to 2 p.m. with a limited menu: on Saturday, January 9, Counter Culture coffee, spreads and bagels available by the dozen and half-dozen, and on Sunday, January 10, the same, but with the addition of house-cured salmon, the ingredient that inspired Philly Style's creation.
The shop's grand opening will be the weekend of January 16, commencing its normal hours: Thursday through Monday, 7 a.m. - 2 p.m., opening an hour later on weekends.
