Last evening, Peggy Zwerver and Tom Baker, with Julie and Stew Keener, opened the doors to their brand new brewpub Bar Hygge at 1720 Fairmount Avenue in Spring Garden. The bar's strange name comes from the Danish word "hygge", a word with no direct English translation, but the menus (below) encapsulate it to this: "the art of building sanctuary and community, of inviting closeness and paying attention to what makes us feel open-hearted and alive".
Executive chef Chris Galbraith's most interesting menu feature: build-your-own boards. Since Hygge's rounded booths and cozy furniture lend themselves to great group seating arrangements, cheese and charcuterie is almost a requisite menu item. But instead of deciding for you, Galbraith is letting guests design their own boards with a choice of 1, 3, or 5 meats, cheeses, and accompaniments.
