Matt and Rachel Baiada, owners of Shoo Fry, a new fast-casual "poutinery" opening at 132 S. 17th Street (in the recently shuttered Underdogs), are shooting for an end-of-May opening for their first location. And then later this summer, a second location is planned for 200 East Girard Avenue, replacing Fishtown's East Girard Gastropub.
Baiada tells Eater that the menu will be a play on the classic burger, fry and shake shop's, instead, flipping it around like some sort of Bizarro World fast-casual concept where fries come first, and then a side of burger, in slider form. Shakes will stay true to form (sort of): Shoo Fry has partnered with off-kilter ice cream expert Little Baby's Ice Cream. Like its soon-to-be neighbor Mac Mart, the menu will be broken down into signature items and a build-your-own component, fries as the base — classic, curly, and a rotating style (wedges, tots, ribbons, potato chips, etc.) — and then a topping of your choice. Baiada is in the process of finding a local diary farm to source cheese from, and a local bakery for slider buns.
As for Fishtown, despite taking over a pub, Shoo Fry will not keep a bar. However, both locations will stay open late for the weekend nightlife (till 3 a.m.!). And if there's one thing for certain about poutine, it's that it's a perfect way to cap a night out on the town.
