Royal Boucherie, the stylish new addition to Old City from Top Chef winner Nick Elmi, is settling into its groove and ready to tackle late night crowds. Starting Thursday, January 11, the restaurant is serving from an after-dinner menu, available until 1 a.m.

As a refresher: Elmi, who also has the acclaimed (and impossible-to-get-into) Laurel on East Passyunk Avenue and its neighbor, the cheffed-up bar ITV, opened Royal Boucherie in November. Behind the project is the team of Stephen Simons and David Frank, who have chef Jesse Ito’s hit Royal Sushi & Izakaya, plus Philly favorites Royal Tavern, Khyber Pass Pub, Triangle Tavern, Cantina Los Caballitos, and Cantina Dos Segundos.

The regular menu at Royal Boucherie is made up of raw bar selections, charcuterie, bar snacks and small plates (pork-stuffed olives, Champagne-braised escargot), and larger dishes, including a 26-ounce bone-in rib eye. And now, snacks, charcuterie, and raw bar items are on offer until 1 a.m., along with some very fancy sandwiches.

Elmi is doing a Foot Long Royal Dog with boudin blanc sausage, sauerkraut, grain mustard, and crispy onions, a Butcher Melt with lomo, lonzino, bresaola, fig jam, petite basque, and pickled long hots, and a grilled cheese with American cheese, mortadella, and pistachios. Also new — drumroll, please — is the Really Big Lobster Roll. The sandwiches come with salad or pork fat fries.
