Philly lost some great hot chicken when Kevin Sbraga closed his Fat Ham restaurants, but the chef is bringing it back for one glorious day. On Tuesday, April 3, Fat Ham fans can order Sbraga’s hot chicken, mac and cheese, and more through delivery service Caviar. This is the first time Caviar is doing one of its delivery “pop-ups” in Philly.
Here’s how it will all go down: Sbraga is setting up at a local restaurant’s kitchen, though he’s keeping which restaurant secret (for now, at least). From the restaurant, he’ll be making the hot chicken, served with white bread, buttermilk ranch, and dill pickles for $18, and the mac and cheese with a Ritz Cracker crust ($5), plus collard greens ($6) and candied yams with marshmallows and pecans ($6). Caviar will deliver the dishes until they sell out, which will probably happen pretty quickly. So those who have their hearts set on scoring a plate of the chicken should probably place orders early. The ordering process will kick off at 11 a.m.

Top Chef winner Sbraga closed all of his restaurants, including Fat Ham, Juniper Commons, and the more upscale Sbraga. He’s now signed on to be the culinary director at the upcoming Fitler Club.
