Marc Vetri’s South Philly restaurant won’t be ready for another month or so, but those who can’t wait can get a sneak peek of Fiorella tonight, Tuesday, December 3. The chef is heading to Primal Supply Meat’s headquarters in Brewerytown for a one-night pasta pop-up.
Starting at 5:30 p.m., Vetri will be at 1521 N. 31st Street serving up $17 plates of pasta, along with wine and snacks. “I’ll be slinging my pasta fork all night!,” he posted on Facebook. The chef is planning a tricolor salad with ranchovy dressing, pork terrine with pickles, ricotta gnocchi, fettuccine with mushrooms, brandade agnolotti, and rigatoni with Fiorella sausage ragu — that last one uses a sausage recipe from Dan and Trisha Fiorella, who owned the Bella Vista butcher shop Vetri bought for his upcoming restaurant.
The restaurant, which keeps the Fiorella name, should open in January 2020, at 817 Christian Street. It’s a casual eatery, Vetri has said (especially compared to the tasting menu-only Vetri Cucina, or the Vetri Cucina in Vegas).
As for why Vetri is giving a sneak peek at Fiorella in another butcher shop: He became a partner in Heather Marold Thomason’s Primal Supply Meats last year.
The pasta pop-up tonight is first come, first served.
