The highly anticipated upscale Japanese restaurant Hiroki is opening in Fishtown on Wednesday, May 22.
The project, one of several noteworthy openings in Fishtown as of late, is the brainchild of Hiroki Fujiyama, former head sushi chef at the 17-year-old Morimoto, and Method Co., the team behind Italian restaurant-slash-hotel Wm. Mulherin’s Sons.
Fujiyama, who is taking the lead in the kitchen at Hiroki, will be serving exclusively omakase menus (which roughtly translates to “I’ll leave it up to you,” meaning diners put full faith in their chef to serve a delectable roundup of sushi dishes). The twenty-course menu will be based around local, seasonally-available ingredients. Each course will come with a unique sake pairing.
“The set menu removes all but the beverage pairing option from the decision diners need to make,” Randy Cook, CEO/Co-fouder of Method Co. said. “This way our customers can sit back, relax, enjoy the companionship of who they are dining with and be taken away by the flavor progression chef has designed throughout the menu.”

The restaurant is located at 1355 N. Front Street, behind Wm. Mulherin’s Sons, near the intersection between Lee and Master Streets. Marked by a circular dark wooden door, the restaurant’s design is minimalist and sophisticated, meant to pair well with its authentic Japanese servings. The design was crafted by Method Co., who used regional timber and reclaimed Southeast Asian teak flooring throughout the space.
The venue seats 26, 14 of which are at a sushi bar, where patrons can watch the restaurant’s skilled chefs in action.
STATUS: Hikori is opening this Wednesday, May 22. It will be open Tuesday through Sunday from 5 to 11 p.m.
